Start the bread crust first.
Use about 1 cup of warm water, 1 t. yeast, 1 T sugar.… Let sit 7 minutes.
Add flour until it is a good stiff dough (probably 3.5 c. to 4 c.). Add about 1 t. salt.
Knead it well. Form a ball. Put about 2 T. of olive oil (a generous amount) in the bowl you will use for proofing it. Flip the ball to cover it with oil.
Let rise 1.5 hours.
Use cookie sheets or pizza pans for cooking the pizza. Put olive oil on the pans and then shape the risen dough in the pans.
Put the pans aside to proof (for 1.5 hours) and then make the sauce while the dough is rising.
For Pizza sauce:
- Olive oil
- Onion
- Garlic
- Spices: oregano, ground thyme, salt and pepper
- 1 can of sauce.
Fry the onions and garlic in olive oil. Add about 1⁄8 of the can of sauce to the onions and garlic and stir it over low heat until it is a bit thickened. Then add the spices and salt and pepper. Next add a few tablespoons of sauce at a time until it is all thickened. Add extra olive oil and let it simmer for as long as you like.
After the dough has risen 1.5 hours, gently spread the sauce over the pizza.
Sprinkle or spread grated mozzarella over the sauce and add any toppings you like.
Bake about 20 minutes at 400°F
Let it cool a bit before eating it.
