These are just standard pancakes, but they taste really delicious.
Just add ingredients in order.
For a smaller recipe:
- 1 c. of flour (I use organic)
- 1 t. baking powder
- 1 t. baking soda
- ½ t. salt
- 2 T sugar (again, I use organic)
- 1 egg
Mix ingredients together with about ½ c. of milk and then …
Add about 2 T melted butter. (Preheat the frying pan and then put about 3 T of butter into it. When melted, pour about 2 T from the pan into the batter above.)
Gradually add more milk until the batter is the right consistency (I think usually a bit shy of 1 c. total milk, but you have to experiment since some people like thinner/thicker pancakes). You can also use ½ whole milk and ½ buttermilk.
Mix everything well.
Always preheat the pan prior to adding any butter or fat. It will prevent the food from sticking. Heating the pan makes the metal molecules expand so butter or oil doesn’t get down into the surface.
I usually use a ¼ c. dry measure cup to scoop the batter onto the pan. Medium heat is best.
Flip the pancakes when they are bubbling. Make sure they are cooked thoroughly. Uncooked pancakes aren’t so good.
If you want to double the recipe, use the following:
- 2 c. flour
- 1½ t. baking soda
- 1½ t. baking powder
- 1 t. salt
- 3 or 4 T sugar
- 1 egg (or 2 if you want)
- 3 or 4 T butter
- Almost 2 c. milk
